Ingredients

  • 2 scoops protein powder vanilla or flavour of your choice
  • 2 large omega-enriched eggs
  • 1 large banana ripe
  • 1/8 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt kosher salt
  • spray coconut oil

Instructions

  • Carefully separate your eggs and place yolks aside in a separate medium-sized bowl.
  • In a clean bown, free of oils/yolks, beat eggwhites on high for 2-3 minutes until they form peaks.
  • Now beat together the egg yolks, ripe banana, protein powder, cinnamon, baking powder and salt until well mixed.
  • Gradually fold the eggwhite mixture into the other ingredients. It is best to pour 1/4 to 1/3 of the eggwhites into and softly fold until mixed, then add another 1/4 and fold, until the mixtures are completely blended.
  • Preeat your frying pan over low heat and spray with coconut oil, ensuring you reach up the sides. Drop 1/4 cup of the mixture into the pan and cook for 1 to 2 mins/side.
  • Enjoy right away, topped with calorie-wise syrup or fresh fruit, or seal in airtight container to reheat later or eat cold.
  • Makes 8 pancakes, or 2 servings.
