Air-Fryer Bok Choy Dumplings

Bok choy is a member of the cruciferous family and tends to be more gentle on digestion than other crucifers like broccoli and cauliflower. Bok choy helps to rebalance your gut's microbiome while also helping to balance hormone levels and reducing estrogen dominance.

  • 1 Air-Fryer Any size can work, you just may need to cook the dumplings a few at a time.


  • 1 tbsp olive oil
  • 10 slices turkey bacon cooked and diced
  • 1 tbsp freshly grated ginger
  • 3 cloves garlic finely chopped
  • 2 cups mushrooms finely chopped
  • 2 cups bok choy
  • 1.5 tbsp low-sodium soy sauce
  • 1/3 cup chives dried
  • 20 wonton wrappers could use more, depends how small you make them
  • 1 package organic chopped salad to pair on the side


  • Preheat air-fryer to 400 degrees.
  • In a large saucepan, heat oil over medium heat.
  • Cook turkey bacon stripes until crispy and set aside.
  • In the same pan, simmer ginger and garlic for a few minutes.
  • Add in bok choy, and pinch of salt. You may need to add 1-2 tbsp of water during cooking time. Cook for 5 minutes.
  • Add in mushrooms, and another tablespoon of water, and cook for another 5 to 10 minutes.
  • Transfer all ingredients (except bacon and wrappers) into blender or food processor and mix into a smooth batter.
  • Chop bacon stripes.
  • Fill each wonton wrapper with 1 to 2 tbsps of batter, and sprinkle in a few bacon bits. Pinch at the top to seal. Repeat until all batter is used.
  • Place into air-fryer with sufficient spacing between each piece. Cook in air-fryer for 8-10 minutes. If you own a small air-fryer, cook in batches.
  • Place on top of salad and enjoy!
