Bok choy is a member of the cruciferous family and tends to be more gentle on digestion than other crucifers like broccoli and cauliflower. Bok choy helps to rebalance your gut's microbiome while also helping to balance hormone levels and reducing estrogen dominance.

Add in mushrooms, and another tablespoon of water, and cook for another 5 to 10 minutes.
Transfer all ingredients (except bacon and wrappers) into blender or food processor and mix into a smooth batter.
Chop bacon stripes.
Fill each wonton wrapper with 1 to 2 tbsps of batter, and sprinkle in a few bacon bits. Pinch at the top to seal. Repeat until all batter is used.
Place into air-fryer with sufficient spacing between each piece. Cook in air-fryer for 8-10 minutes. If you own a small air-fryer, cook in batches.
