Zucchini Crab Sushi
This is a delicious lunch, or a beautiful appetizer to offer your party guests a healthy choice. When it comes to improving your health, zucchini is amazing! This vegetable is loaded with nutrients that aid digestion, ease constipation, balance blood sugar and hormones. Zucchini are stacked with fiber, vitamin C, A, folate and B6. Zucchini's also contain magnesium, potassium, manganese and copper, essential in hormone production.

Equipment
- 1 large peeler
Ingredients
- 1 medium-sized zucchini sliced length-wise using a large vegetable peeler
- 2 tsp hemp hearts or can use chia seeds (note: chia seeds must be soaked in water for 15 minutes prior to use)
- 2 oz fat free cream cheese cut into small sticks
- 3 tbsp fresh parsley
- 1/4 cup carrots sliced thinly
- 1/2 avocado
- 1/2 cup alfalfa sprouts rinsed and dried
- 1 lime optional (or can use lemon), squeezed overtop finished sushi
Instructions
- Wash and dry all veggies. I recommend rinsing the sprouts and leaving to drain in a strainer over a small bowl.
- Using a large vegetable peeler, slice long, lengthwise stripes of the zucchini and place across a large cutting board.
- Chop carrots into short, thin stripes, and place width-wise along the zucchini.
- Cut cream cheese into small pieces and place atop the zucchini.
- Sprinkle with hemp hearts.
- Add alfalfa sprouts, avocado, crab slices, and parsley.
- Start at one end and gently roll up the sushi, securing with a decorative food toothpick.
- Roll all pieces and arrange on a serving platter to enjoy immediately, or store in fridge for use within a few hours.
- Before serving, squirt a lime across the dish.
