
Baked Steak Kabobs

- 8 Wooden Bamboo Skewers
Ingredients
- 8 tbsp coconut oil, melted
- 3 cups chopped fresh parsley
- 2 tsp garlic powder
- 8 oz lean steak, cubed
- 1 zucchini
- 1 eggplant
- 2 green bell peppers
- 1 tomato, cut into large chunks
- 10 ounce mushrooms
Instructions
- Melt half coconut oil and stir together with half the parlsey and garlic. (You need marinade for the meat now, and later you will create it again for the skewers.)
- Combine mixture with steak and place in the fridge to marinate overnight, or for at least 4 hours.
- Begin preparing meal by placing wooden bamboo skewers in water for 10 minutes.
- Preheat your oven to 375 degrees and line your baking sheet with parchment paper.
- Chop up vegetables.
- Remove marinaded meat from the fridge and place onto skewers. Thread in this suggested order: zucchini, eggplant, pepper, steak, mushroom, tomato, onion, repeat!
- Mix together your marinade again. While holding the tip of each skewer, standing each kabob upright in the marinade bowl. Use your fingers to press the parsley mixture onto the vegetables, coating each skewer on both sides.
- Transfer skewers to your baking sheet and drizzle all leftover marinade on top. Cook for 25 minutes, rotating every 5 minutes to create tender vegetables with crisp, brown edges.
- Enjoy! Serving size is 2 to 3 skewers.
