Ultimate Protein Brownies with Prunes

Ingredients

  • 1 scoop chocolate protein powder
  • 150 g 75% dark chocolate
  • 3 large eggs
  • 125 g butter
  • 60 g almond flour
  • 70 g raw sugar
  • 125 g prunes
  • 1 pinch sea salt
  • 1/4 cup raspberries

Instructions

  • If using canned prunes, blend into a puree (keep the water!). If you bought dried prunes, soak in water for 30 minutes before blending.
  • Melt chocolate under low heat in saucepan.
  • Remove chocolate from heat, add sugar, and let rest 10 minutes.
  • Whisk eggs together in a separate bowl and add to the chocolate mixture.
  • Blend prunes, then stir together with almond flour, protein powder and a wee bit (pinch) of salt.
  • Grease a small metal baking dish, pour in mixture, and bake for 35 minutes (350 degrees).
  • Allow to cool to room temperature before cutting into 8 pieces.
  • Sprinkle with salt and serve with raspberries on top. If it's a special occasion, add a dollop of whipped cream for the kiddos!
