Bacon and Chicken Spicy Cauliflower Casserole
This high protein casserole is a delicious change to the norm, and has made it into regularly rotation in my household.

Ingredients
- 1 tbsp extra virgin olive oil
- 2 large chicken breasts prepare ahead of time along with the bacon to reduce prep time
- 4 slices turkey bacon cooked to crispy
- 7 oz white beans favs are lima beans or chick peas
- 7 oz coconut milk
- 1/3 clove garlic diced
- 1 cup frozen cauliflower rice
- 2 cup fresh spinach chopped
- 1/2 large sweet onion
- 1 jalapeño chopped
- pinch sea salt
Instructions
- Preheat oven to 350 degrees.
- If turkey bacon and chicken are not already precooked, then heat olive oil to cook the bacon first in a large saucepan, chop and set aside in a small bowl. Cook chicken in the same pan, using the oil and bacon grease. Chop chicken and set aside in a large bowl.
- Using the same large pan, sauté onion for less than 5 minutes.
- Add in beans, coconut milk, garlic, and buffalo sauce. Simmer for 10 minutes, pour directly into a mixture and blend until smooth.
- In the large bowl containing the diced chicken, add 1/2 jalapeño pepper, cauliflower rice, and spinach. Pour in the creamy sauce and mix well.
- Transfer to casserole dish and baked for 35 minutes.
- Top with chopped bacon bits and serve.
